Chef Brian Peterson – Monday, October 27, 2014

Brian Peterson

Do you love food?  Of course you do.  Do you love perusing through wine, beer or cocktail offerings?  Hmm, maybe so.   Then you already love Chef Brian who is the executive chef and part owner of Earnest (previously Cork) in Chandler.  Chef Brian takes great care in crafting the details that create signature tastes for our palates as well as our eyes.  Not many of us would admit we began a love affair with food because our mothers were not the best of cooks.  But that’s just how Chef Brian got his start in the business—by spending a lot of time eating out and then cooking with and for his grandmother!   His dream as a kid was owning a hot dog cart, walking down the beach selling hot dogs.  And as he got older, his dreams got bigger.  After moving to Phoenix from Chicago, he honed his culinary touch while “chef-ing” at Lon’s at the Hermosa, the Boulders Resort and the Superstition Mountain Golf and Country Club.  While attending college and culinary school, Chef Brian learned the management side of cooking, which is why he became a part-owner of Cork/Earnest.   Today he continues to practice his culinary creativity at Earnest, the neighborhood restaurant.  Come taste your way in getting to know him while you watch him create a dinner just for you on our patio.

Menu:  Will be posted when it becomes available.

Darin Taverna  –  Monday, November 3, 2014

Darin Taverna

What do computational biology and the kitchen have in common?  Oh well, that’s easy—science.  You might say that Darin has “the food thing” down to a science, a science that starts with freshness as he does much of his shopping in his own back yard.  He relies on his drive for precision both at work and at “play” as he measures and weighs a multitude of ingredients to deliver exotic tastes.   It might appear we are on our patio in Tempe but we’ll be travelling around the world with him as he brings in the tastes of India, the allure of the Caribbean-South American cuisine, and the silkiness of Northern Italy and their love affair with cream.  You may never have heard his name before but you’ll not soon forget it.  We invite you to see the Arizona Republic’s 2014 Phoenix’s Top Home Chef as he brings his creativity to our dinner table, showing us just why he won the votes from the Republic’s Food and Dining team.

  • Deconstructed Saag Paneer – a twist on the classic spiced spinach and cheese Indian fare
  • Pernil tacos with Chimichurri Sauce, Jalapeno Coleslaw and Black Bean Succotash – cooking low and slow is key for the flavors of pork leg
  • Pumpkin Panna Cotta with Coconut Crème Anglaise and Pecan Tuille – a fresh take on Thanksgiving dessert

Chef Greg Wiener – Tuesday, November 25, 2014

Gregory Wiener

If anyone has been born with a wooden spoon in his mouth, it is Gregory Wiener.  He was born into a culinary family spending much of his young years in his parents’ restaurant kitchen in Wisconsin.   If you were to ask him what molded his cooking and living style, he might reply it was the pure delight of playing with food to make it match his imagination.  He might also reply it was the tough love encountered as he made his culinary journey through CIA in New York and a variety of great restaurants with great expectations.  His path includes The Boulders and the JW Marriott Desert Springs Resort in California where he learned the business side of food.  Chef Greg may have been born with cooking genes, but he has polished his food creations with his own ingenuity and drive for taste, quality, and fresh local ingredients.   Now as the Executive Chef at The Top of the Rock, Marriott Phoenix at the Buttes, in Tempe, Chef Greg introduces himself to us and we are fortunate to add him to our Hackett House Culinary Hall of Fame.   Just as The Top of the Rock offers patrons a spectacular view of the city below, we will be able to have our own close-up view of Chef Greg as he demonstrates some of the cooking techniques that go into his dishes.

Menu:  Will be posted when it becomes available.
